What do a Korean and a German have in common? A love for fermented foods. That shared passion drives us to make gut-healthy products using overlooked ingredients like cauliflower leaves and broccoli stalks.

We want to change how people experience traditional ferments while reducing food waste and building a more circular, diverse, and self-sufficient UK food system.

We’re all for tradition… with a twist.

Our ferments are rooted in the wisdom of generations of women who preserved with care. Today, we carry that spirit forward by transforming overlooked ingredients into flavourful, gut-friendly foods, keeping tradition alive in bold new ways.

A note from Rebecca —

"I launched The Ferm in 2022 to bring together my Korean roots and background in food waste research.

Born in Gwangju, the mecca of kimchi, I grew up surrounded by the rich traditions of fermentation. To me, our brand is both a tribute to the generations of Korean women who preserved more than just vegetables through kimchi-making and a bold step toward a more sustainable food future."

A note from Maylin —

In 2024, I met Rebecca, and it was a match made in fermentation heaven. I’m a former competitive athlete with a passion for nutrition, climate justice, and entrepreneurship. I fell in love with The Ferm immediately and wanted to bring my business mindset from years in consulting to our brand. It didn’t hurt that I also knew about German lacto-fermentation techniques. 

We just clicked, professionally and personally, building a partnership grounded in shared values, trust, and deep friendship.”
